The time when the vines rest and create their own protection against the harshness of the winter weather. Under the ground the vines are nourished by the soil and the minerals beneath, the new seasons growth both protected and nurtured in readiness for the spring. The plants natural protection against snow and ice ensures no damage is done, and good drainage ensures no waterlogging of the terroir. Vines are pruned to remove old buds and allow the new season flowers to take over.
