Winter

The time when the vines rest and create their own protection against the harshness of the winter weather. Under the ground the vines are nourished by the soil and the minerals beneath, the new seasons growth both protected and nurtured in readiness for the spring. The plants natural protection against snow and ice ensures no damage is done, and good drainage ensures no waterlogging of the terroir. Vines are pruned to remove old buds and allow the new season flowers to take over.

Cold wet winter days and nights suggest a richer more warming drink is enjoyed. Champagne doesn’t disappoint and offers some great vintages and special cuvees to be enjoyed with seasonal foods. Valentines Day provides the romantics amongst us to indulge in some exceptional Rose accompanied by chocolates of course!
